Abstract

Fish satay is a food originating from Tanjung North Lombok Regency. The main ingredient used for satay is skipjack. Skipjack tuna is obtained from around the waters near the Cape. The city of Tanjung is the northern coastal area of Lombok Island which is rich in marine products. To make fish satay as a mainstay of culinary in Tanjung North Lombok Regency, regulations from the government are needed which until now do not yet exist. Data collection methods used in this study were interviews, observation, documentation, and questionnaires. The data was analized in the form of SWOT.
