Abstract
Bubur Pedas is one of the typical foods in West Borneo. The distinctive feature of Bubur Pedas is that there is a spicy taste that comes from the leaves of kesum, and the leaves of kesum are the characteristic ingredients in Bubur Pedas, and cannot be found in porridge in general. This study discusses the preservation of typical foods in West Borneo, namely Bubur Pedas, whose purpose is that the community or the government can preserve Bubur Pedas to the next generation. This study uses qualitative methods, data collected using observation techniques, interviews, questionnaires, documentation and literature. The processing techniques used are reduction, display / presentation, verification, and triangulation. Then the data is processed using SWOT analysis. Interview sampling and questionnaires were taken from buyers, tourists, communities, managers and the government.
