Abstract
Brem Solo is a foof derived from fermented black sticky rice which is taken only from the juice which is then deposited in about overnight. The research method used is a qualitative research method where data collection is generated by means of interviews, observation and documentation. The results of the study show that Brem Solo has a potensial to be developed into one of the local wisdom of Solo City. Preserving Brem Solo can be done by introducing Brem Solo to future generations and maintaining the taste that Brem Solo has making new variations to attract buyers.
